This is a basic and flavorful broth recipe, that you can use to add flavor in recipes calling for broth or as a base for soups.
Ingredients
2 leeks
1 small onion
1 small zucchini
1 tomato
2 carrots
1 small green pepper
Parsley
Some Swiss chard
leaves
1chicken leg quarter,
except if you want a vegetable broth.
Water to fill the pot
Note 1: I don't add any
salt, I prefer adding the salt in the final recipe
Note 2: You can use any
vegetable scraps from preparing other foods.
Directions
Wash and chop all the vegetables.
Place in a pressure cooker the chicken and add the
vegetables. Fill with water and bring to
a boil around 30 minutes.
If you
don’t have pressure cooker place the ingredients in a large pot, bring to a
boil, then reduce the heat and simmer
for at least 1 hour.
Strain the broth, discarding
the vegetables and setting aside the chicken.
I
divide the broth into containers of various sizes (some recipes need more broth
than others) and I place them in the freezer. The broth should last at least 4
months without lose its flavor so always remember to label and date the
container.
