In Spain these rolls are known as "flamenquines". A
“flamenquín” is a typical dish from Cordoba, in the south of Spain. Usually it
consists in breaded pieces of pork loin filled with slices of Serrano ham (prosciutto).
But these ones are a little different, they combine chicken,
prosciutto and avocado.
Ingredients 4 people
8
chicken breast fillets, they must be large enough to be wrapped
Slices
of prosciutto
Slices
of cheese
1 large
ripe avocado
Salt and
pepper to taste
Ground
cumin
A
tablespoon of lemon juice
Bread crumbs
and 1 beaten egg
Olive
oil for frying

Directions
First all mash in a bowl the avocado to make a
paste, season with salt, pepper and ground cumin to taste. Add one tablespoon of
lemon juice to stop avocado turning brown and set aside.
Flatten breast fillets with a meat mallet. Season
with salt and pepper on both sides.
Extend over each fillet a little of avocado
paste, a slice of cheese and a slice of prosciutto.
Fold and roll up. Wrap in plastic film and put
in the fridge for an hour.
Remove from fridge. Dip each roll in the beaten
egg first then in bread crumbs. Twice.
Fry at moderate heat in a large frying pan with
a generous amount of olive oil, constantly flipping to maintain
uniform cooking, until they are golden brown.
When they are done remove from frying pan and
place in a dish with kitchen paper towels to drain the excess oil.
Serve immediately with a salad garnish and
enjoy!
