Ingredients (4 servings)
1 large
chicken cut into 4 pieces
1-2
onions, enough to cover the baking tray
5-6
cloves of garlic
100 ml
of homemade broth
2 medium
lemons (1 in slices and half a lemon in juice)
Salt and
black pepper to taste
Herbs of
Provence to taste
Extra
virgin olive oil for smearing the chicken and pouring some over the tray
Directions
Preheat
oven to 400 ºF (200 ºC).
Grease a
baking tray, peel and chop the onions and the cloves of garlic and put in the
tray. Cut one lemon into slices and place over the onion.
Smear
the chicken pieces all over with olive oil and season both sides with salt and black pepper, and herbs of Provence to
taste.
Place
the chicken onto the baking dish, pour over the juice of half a lemon and pour
in the tray the homemade broth and a little of olive oil.
Roast in
the center of oven at 350 ºF (180ºC), until the chicken is cooked through
(40-60 minutes)
During
the roasting time baste the chicken pieces with the broth and never allow to
dry out.
When is
done turn off the oven and let the chicken rest in the residual heat for ten
minutes. And enjoy!
