Stuffed zucchini boats with couscous, sausages and walnuts
Ingredients (4 servings)
4 large
zucchinis (about 1 kg)
100 g
couscous and the same volume of homemade broth or chicken broth
50 g
walnuts, peeled and chopped
1 medium
onion, finely chopped
2 medium
garlic cloves, minced
1 large
tomato (300 g), grated
6-7
cheese sausages or chicken sausages, cut into slices
Basil
Ground

cheese, grated

virgin olive oil
Directions
First all
you’ve got to make the boat so slice zucchinis lengthwise in half, and prepare
them like you see in the picture.
Place in
the microwave 8-10 minutes until they are done.
Now use a
teaspoon and dig without piercing the skin to remove the flesh. Set aside the
flesh and place the zucchini boats in an ovenproof dish.
Next thing to do is to cook the couscous, you can follow the
directions on the package.
In the absence of instructions what I do is to put
couscous in a bowl and add the same amount of homemade basic broth or chicken
broth. I cover the bowl with a clean cloth and I let it sit for a few
minutes. When couscous has absorbed the broth, break apart and fluff with a fork.
Prepare
the ingredients for the filling.
In a
large skillet put some extra virgin olive oil, when it is hot add the garlic
and the onion and stir fry until is golden, then add the sausage slices.
Then add
the grated tomato, the zucchini flesh (cut into small pieces) and let it cook over
medium heat for a while.
Add salt,
basil and ground black pepper to taste, and finally add the walnuts and the
cooked couscous, stir well to combine.
Stuff
zucchini boats with this mixture. Sprinkle with some grated cheese and some
bread crumbs and place in the oven, bake until cheese is melted.
Garnish
with some fresh basil leaves and serve immediately.
