This recipe is very easy, unexpensive and the most important thing: very tasty.
Ingredients 4 servings
320 g
short grain rice
1000
ml homemade broth
200 g
onion
1
zucchini (about 400 g)
100 g
York ham (about 4 slices)
Aged
cheese, at your taste
Extra
virgin olive oil
Salt
Parsley
and some croutons for garnish
Optional
50 g butter
50 g butter
100 ml white wine
Directions
Chop
finely the onion.
Peel
zucchini and cut into small cubes.
Put the
homemade broth in a saucepan and keep simmering.
In a large
deep skillet add a good splash of extra virgin olive oil and stir fry onion.
When onion is golden brown add the zucchini, a little salt and sauté for a few
minutes.
Add
after the rice and stir well until it looks transparent.
Pour now
the white wine if you want to add it, and let it evaporate the alcohol before
adding broth.
Add to
the skillet two or three ladles of broth and stir well so rice release its
starch.
Lower to medium heat and add more broth as you
see it is necessary (at the end rice should be almost dry), stirring
occasionally.
If you
don't have enough broth you can add a little water.
In the meantime you
can grate the cheese and cut the ham into small strips, set aside.
When
rice is simmering around 15 minutes, taste it and add more salt if neccesary. And be careful rice doesn’t get overdone.
Remove
from the heat when rice is ready. In case you want to put the butter is now the
moment to add it and stir well to melt the butter.
Serve
with ham and the grated aged cheese sprinkled over, garnish with some croutons,
a little parsley and enjoy it!
