This is one of our favorite cakes, moist and simple with an intense banana flavor and covered with a chocolate ganache.
This is one of our favorite cakes, moist and simple with an intense banana flavor and covered with a chocolate ganache.
Ingredients
180 g
brown sugar
125 ml
plain unsweetened Greek yogurt (½ cup)
2 large
eggs
125 ml
olive oil or another vegetable oil (½ cup)
2
teaspoon vanilla extract
175 g
All-purpose flour (1 ¼ cups)
1- ¼
teaspoon baking powder
½
teaspoon baking soda
½
teaspoon salt
2 mashed
ripe bananas (250 g)
Ganache and decoration
150 ml
heavy whipping cream (35% butterfat content)
120 g
chocolate 70% cocoa, chopped
1
chocolate bar
Caramel
sauce
Directions
Preheat
oven to 350 ºF (180 ºC).
Grease a
9 inches pan (22 cms) and set aside.
In a
bowl mix together flour, baking powder, baking soda and salt. Set aside.
In
another large bowl beat eggs.
Add
brown sugar and mashed bananas, continue
to beat for half a minute.
Pour
vanilla extract and vegetable oil and stir with whisk .
Slowly
add half the flour mixture, continue beating. Add yoghurt and then the rest of the flour. Beat just until combined and smooth.
Pour
batter into prepared pan, and bake at 350ºF (180ºC) for 30 minutes or until a
toothpick inserted near center comes out clean.
I poured
some batter and chocolate into a smaller pan to prepare a little cake for my boyfriend, he
couldn’t wait until next day to taste this cake…
Remove
from the oven and cool in the pan for 10-15 minutes on a wire rack.
Then tip
the cake out of the pan and let it cool completely on the wire rack.
Wrap in
plastic film and put in the fridge until next day.
Decoration
Place the chopped chocolate in a medium heatproof bowl. Set
aside.
Place heavy cream in a small saucepan over
medium heat and bring just to a boil.
Immediately pour over the chocolate and let
stand, without stirring, for a few minutes until chocolate has softened. Then stir gently until smooth.
Let cool
slightly before using.
Cover the cake with the ganache, the chopped
chocolate bar and drizzle with some caramel sauce.
